Tom's Staff Pick Feb 2021 - Tom's notes: I found this wine to be interesting because of how much it changed over the time I sipped it. Starting with VERY unripe cherry flavours and red fruit. It was tart and had a chalky mouth feel (Not that chalky is bad) with earthy undertones. After some time in the glass (and the next day as well) all the tart notes and unripe green earthy flavours turned into much softer expressions. The wine really mellowed out and the slight chalky texture fit well into place at this point. If aerated, or with patience, this wine is very enjoyable. But you need to get through the initial punchy fruit it offers when first opened.
